Green Bean Salad
1 1/2 pounds fresh green beans
1 small red onion, chopped
2 tomatoes, chopped
2 oz feta cheese, crumbled
1/2 cup (extra virgin) olive oil
1/3 cup lemon juice
1 tablespoon Dijon-style mustard
1 teaspoon sugar
salt and pepper to taste
String beans and break about once each bean. Cook in boiling water for about 8 to 10 minutes or until tender BUT crisp. Drain and rinse with cold water, make sure you drain completely.
Chill. When ready to serve, toss beans with tomatoes. Beat oil, lemon juice, mustard, sugar, salt, and pepper (together). Pour over bean and tomato mixture and toss - again - to coat.
Dish it out and sprinkle with feta cheese before serving.
