Microwave Bread and Butter Pickles
1 cup sugar
1 cup white vinegar
1/2 cup water
2 tablespoons salt
1 (or 2) teaspoons dried minced garlic (depending on your taste)
1 teaspoon mustard seeds
1/2 teaspoon celery seeds 1 tsp tumeric
1 medium onion, peeled and sliced thin
3 pounds pickling cucumbers, sliced
Mix all (except onions and cucumbers) in a large microwave safe bowl. Then, stir in cucumbers and onions. Microwave 9 minutes on high, stopping to stir every 3 minutes. Remove from microwave and cool (room temp). Cover and refrigerate overnight
before placing in jars. Distribute the juice evenly if you use more than one jar. Store in your refrigerator.
