Traditional Holiday Butternut Squash

Another traditional recipe for both the Thanksgiving and Christmas holiday season is Butternut Squash. There are many recipe variations, but you're invited to enjoy mine!

1 medium-sized butternut squash
1/8 cup (apporoximately) of. water (to lightly cover baking dish bottom)
1/4 cup chopped onion (saute in butter)
1 1/12 tablespoons butter
1/2 teaspoon pumpkin pie seasoning
salt and pepper to taste

Preheat your oven to 350 degrees, Using a sharp chef's knife peel the rind off your butternut squash. Cut in half, remove the seeds, cut into small cubes. Saute your chopped onion (use a pad of butter) until ALMOST transparent, Add remaining ingredients (except butter) to a baking dish, mix well and bake until squash is soft and tender. Serve topped with butter and Garnish with fresh or dried parsley, For a variation you can also add some chopped pecans and/or 1/4 cup of diced apple.
