Wild Rice and Spaghetti Chicken

INGREDIENTS:
1 Tablespoon Olive Oil
1-2 (depending on size) Chicken Breasts, chopped
1 Cup Wild Rice
2 Cups spaghetti, cooked and strained
3 Green Onions, chopped
1/4 Cup Red Bell Pepper, chopped
3 Cups Chicken Broth
1-2 Cloves Fresh Garlic, minced
Salt and Pepper
Fresh Parsley

PREAPARATION:
Briefly saute garlic in the olive oil, then add your chicken to also saute. Set aside. In the same pan, saute the wild rice, green onions, and red peppers (about 3-4 minutes). Stir in chicken broth, cover and simmer for 15 minutes. Add your chicken/garlic mixture, and cooked spaghetti. Let this cook about another 10 to 15 minutes (covered). Remember to stir every now and then to prevent spaghetti from sticking. When is ready to be served, your chicken should be very tender. Salt and pepper to taste. Garnish with chopped fresh parsley.
