St. Patrick's Day Dip

INGREDIENTS:
4 Cups Shredded Sharp Cheddar Cheese
4 Cups Shredded Mild Cheddar Cheese
2-3 Cloves FRESH Garlic, Finely minced
3 Tablespoons Worcestershire Sauce
1 Small to Medium Onion, finely minced
1/4-1/2 Teaspoon of Your Favorite Hot Sacue
1 Tablespoon Horseradish
1 Bottle of Guinness Stout, room temperature
Salt

PREPARATION:
In a mixing bowl, combine your cheeses and garlic. Set aside allowing the mixture to soften until its at room temperature. Add the remaining ingredients and stir in enough Guiness to make it a spreadable mixture. Add salt, if necessary, to taste. Place in a serving dish; cover, and refrigerate overnight (or at least for several hours) before serving. Serve your choice of crackers or dipping chips.

Hint: For some added "zing" crumble in some blue cheese during your initial preparation.
