Potato Griddle Cakes

1/2 pound raw potatoes
1/2 pound plain flour
1 egg
1/2 pound mashed potatoes
milk
salt
pepper

Grate raw potatoes and mix with cooked mashed potatoes. Add salt, pepper, and flour. Beat egg and add to mixture with enough milk to make batter that will drop from a spoon. Remember: You can add, but not take away. Drop batter by tablespoon on a hot griddle or frying pan. Cook over moderate heat for about 3 or 4 minutes on each side. Serves 8.
