Pumpkin Pie Recipe

A holiday dessert treat, a tradition on both Thanksgiving and Christmas, is pumpikn pie.
The recipe is quite simple and is certain to please your family and friends.

1 lb. cooked pumkin (puree)
(fresh or canned))
2 large eggs, beat slightly
3/4 cup sugar
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/8 teaspoon ground ginger
1/8 teaspoon allspice
1 1/2 cup evaporated milk
1 9" deep dish pie crust (bottom shell only)
(This usually comes in its own pie tin. You may make the crust, yourself, but this is easier)

Set pie crust aside, for now. Mix all ingredients in a bowl, then pour into pie crust.
Pre-heat your oven AND a cookie sheet to 450 degrees, place pie on the cookie sheet and bake for approixmately 15 minutes, before reducing the oven heat to 350 degrees, then cook another 45 minutes. Remember: Oven temperatures vary, so keep checking. When you can insert a toothpick into the center of your pie and it comes out clean, its ready!

For a bit of a surprise, add a small bag of crushed pecans to your mix. Either way, when your pie has cooled, optionally serve with a dollup of whipped cream on top.

Easy Holiday Spinach Dip

One of the most favored dips for the holidays is, surprising, not your worst relative, LOL.
Its an extremely simple spincah dip. The recipe is so simple, anyone can pull it off for a
great holiday or party treat!

1 cup sour cream
1 cup mayonnaise
1 1 1/2 oz. pkg of dry vegetable soup mix
1 10 oz. pkg thawed and squeezed dry spinach
1 8 oz. can water chestnuts (optional)

Mix all the ingredients in a bowl and refrigerate overnight.

For a bit of extra zing, you may also choose to add a small jar of artichokes (puree them) as well as a small bag of shredded Italian cheese.

Microwave Bread and Butter Pickles

1 cup sugar
1 cup white vinegar
1/2 cup water
2 tablespoons salt
1 (or 2) teaspoons dried minced garlic (depending on your taste)
1 teaspoon mustard seeds
1/2 teaspoon celery seeds 1 tsp tumeric
1 medium onion, peeled and sliced thin
3 pounds pickling cucumbers, sliced

Mix all (except onions and cucumbers) in a large microwave safe bowl. Then, stir in cucumbers and onions. Microwave 9 minutes on high, stopping to stir every 3 minutes. Remove from microwave and cool (room temp). Cover and refrigerate overnight before placing in jars. Distribute the juice evenly if you use more than one jar. Store in your refrigerator.

Green Bean Salad

1 1/2 pounds fresh green beans
1 small red onion, chopped
2 tomatoes, chopped
2 oz feta cheese, crumbled
1/2 cup (extra virgin) olive oil
1/3 cup lemon juice
1 tablespoon Dijon-style mustard
1 teaspoon sugar
salt and pepper to taste

String beans and break about once each bean. Cook in boiling water for about 8 to 10 minutes or until tender BUT crisp. Drain and rinse with cold water, make sure you drain completely.
Chill. When ready to serve, toss beans with tomatoes. Beat oil, lemon juice, mustard, sugar, salt, and pepper (together). Pour over bean and tomato mixture and toss - again - to coat. Dish it out and sprinkle with feta cheese before serving.

Pumpkin Nut Bread

1 cup pumpkin puree (canned is fine)
2 cups flour
1 cup sugar
2 eggs
1/2 cup milk
1/4 cup butter, softened
1 cup chopped nuts (your choice - walnuts or pecans)
2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon nutmeg
1/2 teaspoon cinnamon
1 teaspoon salt

Preheat oven to 350 degrees. Mix flour, baking powder, baking soda, and spices. In a separate bowl, combine pumpkin puree, sugar, milk and eggs. Beat in softened butter. Add dry ingredients to pumpkin mixture until blended. Mix in the chopped nuts. Pour into greased loaf pans (9x5x3). Bake in oven for 45 to 55 minutes. Check with a toothpick. If it comes out clean, its done. Allow to stand in pans 5 minutes and turn out onto a rack to cool. This recipe is good warm or cold. Feel free to slice it and spread with softened cream cheese.

Gulliver's Corn

2 bags frozen kernel com (defrosted)
1 cup whipping cream
2 tablespoon salt
1 teaspoon sugar
1/2 cup grated parmesan cheese
3 tablespoons flour, mixed with 3 tablespoons butter

Bring whipping cream to a boil. Reduce heat. Add corn. Simmer for 5 minutes. Stir in salt and sugar. Make a paste out of the butter and flour, stir into the corn, cook until thickened. Turn corn into oven-proof dish, sprinkle with cheese and dot with butter.

Refrigerate up to 4 days. Bake at 350 degrees for 30 minutes, or until golden brown.

Slow Cooker/Crock Pot Pork Roast with Vegetables

3 pounds boneless pork shoulder roast
2-15 ounce cans chicken broth
3 cups peeled, chopped potatoes
2 onions, peeled and quartered
1 cup carrots, cut into chunks
1 tablespoon dried rosemary
1 teaspoon ground black pepper
salt (to taste)

Place the pork roast in your slow cooker/crock pot. Pour in the broth. Add potatoes, onions, carrots, rosemary, and pepper. Cover and cook on Low 8 to 10 hours. Season with salt to taste.

Blackberry Cobbler

8 ounces fresh blackberries
1 stick butter
1 cup sugar
1 cup flour
1 cup milk

Melt butter in oven in a square baking dish. Mix flour, sugar, milk, and pour into the buttered dish. Spead blackberries into the dough mixture and sprinkle some sugar on top. Bake at 350 degrees until golden brown. By the way, you can substitute cherries, apples, or peaches for the fruit.
