Pumpkin Pie

Pumpkin pie is a pumpkin custard baked in a single dep dish pie shell with no top crust. Its usually flavored with nutmeg, ginger, cinnamon, allspice and cloves and served with whipped cream as a topping.. Traditionally, the pie was made with fresh pumpkin, that had to be cooked, then made into a puree, before being baked into the pie. Today, the most common way to prepare pumpkin pie is to buy canned pumpkin, then and your spices, thus saving the time and effort required to make your own pumpkin puree.

Pumpkin pies were usually made in late autumn and early winter, when pumpkins are harvested, but may now be enjoyed all year round. This traditional American dessert is especially served during the Christmas and Thanksgiving holidays.

Its recorded that when the settlers first came to the "New World," they were introduced to the pumpkin by the Indians. The settlers used their English recipes for sweet pies, made from boiled spiced fruit, to prepare pies using pumpkin. In the fall of 1621, the settlers wanted to give thanks to God, celebrating with a feast. Pumpkin pie was served on that day, which is now known today as (you guessed it): Thanksgiving. As a result, the national tradition of serving pumpkin pie on Thanksgiving Day was born and continues today, but with many recipe variations.
