Spinach Facts

Spinach has a high nutritional value, particularly when fresh, steamed, or quickly boiled. Its a rich source of vitamins A, C, E, K, and magnesium. Spinach also contains several antioxidants, including opioid peptides, and a source of folic acid. Spinach is believed to be high in both iron and calcium content, but not as high as originally thought.

There are three types of spinach: savory spinach, flat leaf spinach, and semi-savory spinach. You can find spinach in your market sold in various forms: Loose, bunched (usually in pre-packaged bags), canned, and frozen.

When cooked, the volume of spinach has been known to decrease by as much as 3/4ths. Its actually a flowering plant, native to central and southeast Asia. Its a pretty sturdy plant, as well, because spinach usually survives the colder winter temperatures.

Of course, most of us remember that "Popeye the Sailor" (a popular cartoon character) loved his spinach and it provided him with additional strength when battling cartoon villians.
